A few years ago, my dad and I had a huge party.
My mom and dad were both super-duper-proud, so we decided to make some vegan lasagna.
I love that my dad makes me eat his lasagna at least once a week, and I love the idea that he’s actually trying to give me something to eat that I’ve never had before.
The only problem is that my family has no idea what to do with it.
I mean, who does a vegan lasagne at a birthday party?
I thought maybe we could cook up some vegan chili, or make vegan chocolate chip cookies.
I’d probably need to make vegan versions of these too, but there’s no way we’re going to make lasagna with my dad’s leftover lasagna and my mom’s leftover vegan lasagnes.
Instead, we decided we’d make homemade lasagna by using the ingredients from my dads lasagna recipe and my grandma’s homemade lasagne recipe.
We started out by making a batch of the original lasagna, and then we made a batch with our new ingredients.
Then we just left it out there for another couple of weeks, waiting for the flavors to mature.
It took me about six weeks to get all the flavors I liked, and it took me three to four weeks to really get the consistency of lasagna I was looking for.
I’m still not sure how long it will take to get my grandmother’s flavors exactly right, but I know I’m going to have some new flavors and I’ll have some old favorites to try too.
And I’m not going to stop until I’ve finished this whole process.
